If great wine is all about balance, then the quest for that balance starts in the vineyard. The viticulturist is the one charged with striking the right ripeness and ensuring the vines are at their peak for the harvest, whatever the conditions.
At Numanthia, his task is far from simple. The viticulturist has to preserve, nurse and well balance a unique patrimony. Spread over a patchwork of tiny plots on the hillsides and plateaux sculpted by the River Duero, the arid vineyards endure an extreme climate where hot, dry days alternate with cold nights. The vines, some of them planted over a century ago, are unique to the Toro region and among the very few naturally resistant to the phylloxera epidemic that swept European vineyards in the 19th century. Ungrafted and with a heritage stretching back several hundred years, they require careful pruning and nurturing.
As harvest time approaches, the viticulturist tastes grapes from each plot of vines daily. Only when he senses that the fruit has achieved the optimal balance of ripeness and flavor can the picking begin.
